I love pumpkin soup! My favorite recipe uses basic ingredients like pumpkin, onion, garlic, vegetable broth, and spices. To start, you will need to peel and chop the pumpkin into small pieces. In a pot, sauté some chopped onions and garlic until they are soft and fragrant. Then, add the chopped pumpkin and some vegetable broth to the pot and let it simmer until the pumpkin is tender. Next, use an immersion blender or transfer the soup to a regular blender and blend until it is smooth and creamy. If the soup is too thick, you can add more broth or water to thin it out. Finally, add some spices such as salt, pepper, and nutmeg to taste.
