Craving gluten: a newly diagnosed celiac's lament

Y’all today all I want is GLUTEN! Sigh. It was such a comfort food for me. I’ve only been diagnosed a couple months. Just posting because I’m frustrated. Not actually going to go buy a baguette and drown my sorrows with a donut. 🤪😩

It is a comfort food & ironically I turned to toast, saltines & noodle soup to “feel better” before I was diagnosed. Canyon Bakehouse has great bread and bagels.

Get some gf flour imported from Italy(it’s in most grocery stores, just look for a tiny 🇮🇹)!!! It’s honestly better than normal flour and has very similar baking properties!! It is the only thing that satisfies those cravings for me :)

I feel ya. I found out about my celiac disease 2 weeks before I found out I was pregnant & I had HG. All I wanted were some saltines. And real peanut butter crackers. Oh and fried chicken & pineapple upside down cake 🤤 I digress, I find something similar or make it myself. What are you craving? Or is it everything? I have days like that too lol

Mostly everything lol! I just want some good crusty bread mostly. I’d kill for this particular ham & gruyere croissant that my fav bakery close by sells. But I’d accept gluten in all its forms 🥲

I hear you. I followed a recipe for gf pierogies today the dough was so crumbly I had to throw it all away I was so mad 😥

You might want to try Gifted Breads. I am addicted to their dinner rolls. I’m not a big donut person, but Katz makes some good donuts!

How do you get gluten free baking not to be crumbly? I’m failing miserably at it

I could relate I loved pastas, pizza, ramen noodles. 😢 But the gluten free spaghetti tastes pretty good. The gluten free pastas are made from corn and rice that's why it has a sweet taste to it. I love their pasta with some butter and parsley in it. Of course I have to use gluten free butter though.
